Spicy Blackeye Pea Salsa


1/2 pound dried C&F Foods Blackeye Peas
3 tomatoes, diced
1 small onion, chopped
1 small jalapeño pepper, chopped
2 1/2 tablespoons fresh cilantro, chopped
2 to 3 cloves garlic, minced
1 lime (or more to taste), juiced
Salt to taste


How to Prep and Cook Dried Beans
Rinse, soak, and cook dried beans.
Mix tomatoes, onion, jalapeño pepper (omit seeds for less spice), cilantro, and garlic together in a bowl; add lime juice and salt and mix well. Refrigerate at least 4 hours. Stir salsa into blackeye peas. Serves 4.
