Polish Pearl Barley Soup


3/4 cup uncooked C&F Foods Pearl Barley, rinsed
8 cups soup stock
1/2 cup butter or other fat
1 1/2 large onions, chopped
2 carrots, diced
1 turnip, diced
1 leek, chopped
1/2 cup celery, chopped
2/3 cup mushrooms, chopped
1 teaspoon salt
1/4 teaspoon freshly ground pepper
4 teaspoons sour cream


Simmer barley in 1 1/2 cups of stock until tender. Add butter gradually. Boil all chopped and diced vegetables in the remaining stock until tender. Then add the cooked barley and salt/pepper. Add sour cream when ready to serve. Serves 6.
