Gluten-free Black Bean Brownies

Ingredients

1/2 cup dried C&F Black Beans (about 1 1/2 cups cooked)
3 large eggs
3 tablespoons oil
4 tablespoons cocoa powder
1 teaspoon vanilla
3/4 cup sugar
Pinch of salt

Preparation

How to Prep and Cook Dried Beans
Rinse, soak, and cook dried beans.
Preheat oven to 350°F (177°C). In a food processor, combine the cooked and drained black beans, cracked eggs, oil, cocoa powder, vanilla, sugar, and salt, and purée until smooth. Pour batter into a greased 6 x 9 inch glass or metal pan (use a loaf pan for thicker brownies), and bake for about 30 minutes. Let the brownies cool completely before serving. Serves 6 to 8.
