Easy Sushi Rice

Easy Sushi Rice


2 cups uncooked C&F Foods Calrose Rice
3 cups water
1/3 cup rice vinegar
1 tablespoon vegetable oil
3 tablespoons sugar
1 teaspoon salt


Rinse the rice in a strainer 3 to 5 times or until the water runs clear. Mix with water in a medium saucepan. Bring to a boil, then reduce the heat to low. Cover and cook for 20 minutes. Let cool long enough that it can be handled comfortably.
Combine the rice vinegar, oil, sugar and salt in a small saucepan. Cook over medium heat until the sugar dissolves. Cool, then fold into the cooked rice. The rice may seem wet at first, but keep stirring; it will dry as it cools down. Use to make 16 to 24 sushi roll pieces. Serves 15 as a side dish.
