1 package C&F Foods Bean Classics 16 Bean Soup Mix (with ham seasoning packet)
1 cup red onion, diced
1 tablespoon olive oil
3 cloves garlic, minced
1/4 cup green onions, chopped
1/2 teaspoon fresh thyme
1/2 teaspoon parsley
1/2 teaspoon oregano
Zest of one lemon
1 1/2 pound ham bone (preferably with meat on)
6 to 8 cups water or vegetable broth
1 cup celery, diced
How to Prep and Cook Dried Beans
Rinse, soak, and cook dried beans.
Over medium heat, sauté red onions in oil until they are soft. Add minced garlic, green onions and all of the herbs, including the zest, stir and heat through for about 2 minutes.
Place ham bone in a large kettle with beans in water or broth. Add celery. Cover pot again and allow to simmer for 1 1/2 hours or until meat is tender. Add additional water or broth if needed during cooking. In the last 1/2 hour, add the ham seasoning packet and check beans for tenderness. If beans are still firm, simmer for an additional 1/2 hour. Serves 10.
