C&F CARRIBEAN RED BEANS AND RICEC&F CARRIBEAN RED BEANS AND RICE

1-1/2 cups cooked C&F red beans
4 ounces diced lean ham
2 tsp. vegetable oil
1 cup water
1 small clove garlic, minced
1/4 tsp. ground black pepper
1/8 tsp. bottled hot pepper sauce
4 to 6 cups freshly cooked C&F rice
Optional: chopped red peppers; yellow peppers; green onions


Instructions:

Saute ham and onion until onion is tender. Add beans, water, and seasonings. Bring to boil; cover and simmer for 30 minutes. Mash about 1/2 cup beans and return to mixture; mix well. Serve over cooked rice; sprinkle top with green onions and peppers.


Makes 4 servings.

Each serving provides 350 calories, 15.6 grams protein, 4.6 grams fat (12% calories from fat), 60.3 grams carbohydrate, 15 milligrams cholesterol, 2.4 grams fiber, and 764 milligrams sodium.
