1 cup uncooked C&F Foods White Jasmine Rice
1 1/2 cups water
1/2 cup coconut milk
1 1/2 teaspoons curry powder
1/2 teaspoon ground coriander
1 1/2 red bell peppers, cut into thin strips
1 medium carrot, grated
1/4 cup scallions, chopped
Salt to taste
1/3 teaspoon chili flakes (optional)
Add water and rice to a skillet. Cover with a lid and let boil for 5 minutes. Add the coconut milk, curry powder, ground coriander, peppers, carrot, scallions, salt, and chili flakes (optional).
Cook for an additional 10 to 15 minutes, or until all liquid is absorbed and the rice is well-cooked. Serves 4.
