1 cup dried C&F Foods Mayocoba Beans
1/4 cup onion, diced
1/2 cup white onion, finely chopped
1 tomato, finely chopped
1 tablespoon jalapeño pepper, seeded and chopped
1/4 teaspoon freshly ground pepper
1 tablespoon lemon juice
1 tablespoon olive oil
Salt to taste
How to Prep and Cook Dried Beans
Rinse, soak, and cook dried beans. Add the 1/4 cup onion during cooking time.
In a large bowl, combine drained cooked beans/onions with the remaining ingredients. Mix well. Cover tightly and chill in the refrigerator for at least 30 minutes. Serves 6.
