Lasagna-Style Rice Casserole

Ingredients

4 (14-ounce) bags C&F Foods Ready Now Boil-in-Bag White Rice or 3 cups C&F Foods Extra Long Grain White Rice, cooked as directed on package
1 pound ground beef or turkey
1 (26-ounce) jar spaghetti sauce
1 teaspoon garlic powder
2 eggs, lightly beaten
1 cup shredded Parmesan cheese, divided
2 1/4 cups mozzarella cheese, shredded
2 cups ricotta cheese
Salt and freshly ground pepper to taste

Preparation

Preheat oven to 375°F (190°C). Heat a large skillet over medium-high heat. Cook and stir beef or turkey in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add spaghetti sauce and garlic powder.
Mix rice, eggs, and 1/4 cup Parmesan cheese in a bowl. In a separate bowl mix 2 cups mozzarella cheese, ricotta cheese, and 1/4 cup Parmesan cheese.
Spread half the rice mixture in a 3-quart baking dish, followed by half the cheese mixture and half the meat sauce. Repeat layers. Sprinkle remaining 1/2 cup Parmesan cheese and 1/4 cup mozzarella cheese over the final layer of meat sauce. Bake in the preheated oven until cheese is melted and sauce is bubbly, 20 to 25 minutes. Serves 8.
