HARVEST LENTIL PILAF
4 cups C&F lentils,
rinsed
2 cups C&F long-grain white rice
1 cup wild rice, rinsed
1 cup butter, margarine or oil
2 cups chopped onions
3 Quarts plus 1 cup cups chicken broth, heated
4 ounces slivered almonds, if desired
2 tablespoons minced garlic
2 teaspoons dried thyme leaves
Salt and pepper to taste
1/2 cup dried parsley leaves
Instructions:
In steam-jacketed kettle or large saucepan, sauté lentils, white
and wild rice in butter or oil until onion is tender, about 5 minutes.
Stove top method: Add chicken broth, almonds if desired, garlic, thyme,
salt and pepper. Bring to a boil. Reduce heat: cover and simmer 20 minutes.
Stir in parsley.
Continue cooking, covered, and additional 10 minutes or until liquid is
absorbed.
Yields 24 (3/4 cup) servings.
Each serving provides
280 calories, 16 grams protein, 40 grams carbohydrate, 14 grams fiber,
1392 milligrams sodium.
