3 cups uncooked C&F Foods Brown Rice
2 tablespoons vegetable oil, divided
1/2 red bell pepper, chopped
1/2 cup green onion, chopped
4 cloves garlic, minced
2 tablespoons light soy sauce
1 tablespoon rice vinegar
1 cup frozen peas, thawed
1 cup cooked chicken, chopped (optional)
1 egg (optional)
Cook brown rice according to package directions.
Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the bell pepper, green onion, and garlic. Cook and stir, about 3 to 5 minutes.
Add the remaining oil and rice; stir until heated through. Stir in the soy sauce, rice vinegar and peas, and continue to cook for 1 to 3 minutes. Add chicken, followed by one beaten egg, if using. Continue cooking and stirring until egg is scrambled and thoroughly cooked. Serves 6.
