1 medium tomato, chopped
1 to 2 cloves garlic, minced
1/2 small onion, chopped
Salt and freshly ground pepper to taste

1/4 teaspoon saffron threads, crushed

How to Prep and Cook Dried Beans
Rinse, soak, and cook dried beans. Reserve the cooking liquid.
Combine tomato, garlic, onion, salt, and pepper in a blender or food processor and purée; set aside.
Heat oil in a large saucepan over medium-high heat. Add the tomato purée and cook, stirring constantly, until it begins to thicken, about 5 minutes.
Add the fava beans along with cooking liquid, saffron, and cumin. Cook, stirring occasionally, until beans are tender and break up in the soup, about 10 minutes. Serves 6.
