2 1/2 cups (1 pound) uncooked C&F Foods Extra Long Grain Brown Rice
4 cups (1 quart) chicken stock
3 cloves garlic, minced
1/4 cup fresh lime juice
2 tablespoons olive oil
1/2 teaspoon salt (or more to taste)
2 teaspoons dried oregano
2 teaspoons ground cumin
1/4 cup onion, minced (optional)
1/2 teaspoon freshly ground white pepper (or more to taste)
1 1/4 cups fresh cilantro, chopped
Add rice and stock to a large pot and bring to a boil over high heat. Cover and simmer on lower heat for 45 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
While rice is cooking, mix together garlic, lime juice, olive oil, salt, oregano, cumin, onion (optional) and pepper. Pour over cooked rice. Add cilantro and lightly toss to combine. Sprinkle with additional salt and pepper to taste. Serves 10.
