1/2 teaspoon C&F Foods Organic Black Chia Seeds
3/4 cup cornmeal
1/2 teaspoon desired seasonings (salt, freshly ground pepper, garlic powder)
4 boneless tilapia fillets (1 pound total), patted dry
In a medium-size bowl, beat the egg and set aside. In a separate medium-sized bowl, combine cornmeal, chia seeds, and seasonings. Heat a thin layer of olive oil in a skillet over medium heat. One fillet at a time, dredge the fish in the egg, then in the cornmeal mixture, making sure to coat both sides. Place fish in the heated oiled pan and cook for about 5 minutes on each side (thicker fillets may require more cooking time). Serve with lemon wedges. Serves 4.
