2 cups C&F Foods Brown Extra Long Grain Rice, cooked
2 cups milk (2% low fat)
2 1/2 tablespoons brown sugar
2 tablespoons heavy cream
1/8 teaspoon salt
2 cups of dried cranberries (or other dried fruit), and/or nuts
Cook rice according to package directions.
Combine milk and brown sugar in a medium saucepan. Briefly bring to a boil while whisking and then reduce to a simmer. Cook, stirring occasionally, until liquid has reduced to 1 1⁄2 cups, about 10 minutes. Stir in rice and cook for 5 to 10 minutes, until some of the liquid has been absorbed. Remove from heat and cool to room temperature or for thicker consistency, leave in refrigerator overnight. Stir in cream and salt. Serve in bowls with fruit (or nuts) on top. Serves 4.
