Lentils
Lens esculenta
 Lentils come in green, brown or red color. Green lentils are flat, disk shaped, have a size of about 1/8 of an inch. This type is grown in the Northwest. Brown Lentils are smaller than green lentils and are plump in shape. This variety is imported. Whole red lentils are about 1/8 inch in size, have a salmon color and are grown in the Pacific Northwest.
Lentils have been eaten for about 8,000 years in the Middle East, but have no exact origin. This legume has been found in archeological digs in Turkey and Iraq. Other findings have shown that lentils were eaten by ancient Greeks, Egyptians and Hebrews. Today lentils are highly consumed by the Middle East but India consumes the largest amount of lentils. Lentils did not appear in the U.S. until after WWI.
Lentils can be used as a substitute for meat, pasta, or potatoes in soups and stews. Lentils require no soaking and cook relatively quickly. Lentils are produced in Eastern Washington and Northern Idaho.
