Green Split Peas

Pisum sativum

Green split peas come from field whole peas, which are harvested when mature, stripped of their husks, split in two, and then dried.  These peas are smooth in texture and have a bright green color.  Split peas have been around since about 6,000 B.C. and are believed to originate from the Middle East.  Widely used in the Mediterranean split peas were eaten by the Greeks and the Romans.  They made their way into India and China.  In the sixteenth century split peas were highly cultivated in Europe.  

The green split peas are used in split pea soup and cook faster than whole dried peas.  A good source of fiber green split peas can be used in many soups, salads or as side dishes.
